a sunday salad

So a couple Sundays ago I made a great, simple salad.  I was cleaning out my fridge, and wanted to use up what I had. It’s almost exactly like the salads I always make, but I’m at home in LA now so I’ve been able to get ingredients from the Farmer’s Market and my garden.

The salad was so delicious, and it was huge, so I was able to keep it ready to pull from for a few days, and would just add dressing as I go.

ALICIA'S SUNDAY SALAD
INGREDIENTS:

From my garden:
Red Butter Leaves
A little dandelion

Chives

Arugula

Lemon

From the farmer’s market:
Radicchio

Watercress

Wild Spinach Leaves
Snap Peas
Carrots

English Peas

Daikon

Basil

Salad Dressing:
I grated ginger, and squeezed out the juice

Ume Vinegar

Olive oil
Lemon

Peanut Butter Cookies

Peanut Butter Cookies

Spelt flour bakes into a slightly darker cookie (photo), whole wheat pastry flour is slightly blonder - more traditional in appearance in the end. Finish the cookies with chopped nuts or a sprinkling of flaky salt. I'd also recommend seeking out a peanut butter that is well combined, and not super-oily (extra slick) looking - to avoid problems with the cookie batter.
2 cups whole wheat pastry flour, spelt flour, or unbleached all-purpose flour
1 teaspoon baking soda
3/4 teaspoon fine grain sea salt
1 cup organic, chunky natural peanut butter
1 cup maple syrup
1/3 cup extra virgin olive oil
1 1/2 teaspoons vanilla extract
Preheat oven to 350F degrees. Place racks in the top third.
In a medium mixing bowl combine the flour, baking soda, and salt. in a separate larger bowl combine the peanut butter, maple syrup, olive oil, and vanilla. Stir until combined. Pour the flour mixture over the peanut butter mixture and stir until barely combined - still a bit dusty looking. Let sit for five minutes, give one more quick stir, just a stroke or two. Now drop by heaping tablespoonfuls onto parchment-lined baking sheets. Press down on each one gently with the back of a fork. It's a loose batter, so if you're set on doing criss-crosses, go ahead and chill the batter for an hour or so before this step. Bake for 10, maybe 11 minutes - but don't over bake or they will be dry. Let cool five minutes and transfer to a cooling rack.
Make 2 - 3 dozen cookies.

Green Spring Cleaning

Green Spring Cleaning

As spring settles in, the days get sunnier. Doesn’t it feel like it’s time to open the windows and spruce up your living space with a little spring cleaning? In these rough financial times, we’re all looking to save a little green. However, for those of us who are trying to live green and are already paying a little extra for organic foods, shelling out a little extra for greener household products might not be an option.
Here’s some good news: You can make your own cleaners for a fraction of the cost. And not only can they lift dirt and grime to leave your house sparking clean, these cleaners, with ingredients like bay leaves, lime, and peppermint, can also lift your spirits with their fragrance!
All-Purpose Cleaner
To make a simple cleaner for wiping down counter tops, sinks, and cupboards, mix equal parts white vinegar and water in a spray bottle.
For cleaning linoleum and tile floors, place this same mixture in a bucket and dip your mop in.
Air Freshener
To get rid of unpleasant odors, leave out a halved lime (make sure that the cut side is facing upward) in a bowl of baking soda. Instead of throwing the lime and baking soda into the trash when you’re finished using them, grind them up in your garbage disposal instead to freshen the surrounding area.
If you’re a coffee drinker, don’t toss out your coffee grounds after use. Instead, put them in a bowl to absorb odors.
To keep kitchen cupboards and drawers smelling fresh, add a few dried bay leaves.
Fabric Freshener
To freshen couch cushions, use a spray bottle filled with water and two drops of an essential oil such as lemon, orange, or peppermint. Essential oils are very potent, so one or two drops is all you need. Shake the bottle to mix the ingredients and mist whenever freshening is needed.
Carpet Freshener
Crush a couple of bay leaves and mix them with a bowl of baking soda. Add one to two drops of an essential oil and mix with a spoon. Sprinkle this mixture on rugs and carpets, and allow it to stand for a few minutes before you vacuum it up.
Cooktops and Ovens
For cleaning cooktops, dust with a bit of baking soda and squeeze some lime juice over it. You can use the cut lime half as a scouring tool to scrub the cooktop. Use a toothbrush to scour any hard-to-reach spots. For tough spots, make a paste out of some lime juice and baking soda, and let it sit on the problem areas for several minutes before scouring.
For ovens, make a paste out of lime juice, baking soda, and salt. Wipe out the inside of the oven with a damp sponge, then apply the paste. Allow the paste to stand for about a half-hour, then scrub it off using a scouring pad.
Hard-to-Reach Grime
Have an oddly shaped vase that you can’t seem to clean the inside of? Squeeze a drop of dish soap or some vinegar into the vase and add water along with a small amount of dried rice. Cover the top with your hand, shake and swirl the rice around, then rinse.

Happy spring cleaning!

6 Home Remedies To Lighten Hair Naturally
If you are someone who gets sick of your hair color — and who doesn’t, from time to time? — there is great news … there are several home remedies to lighten hair naturally. This is especially true if your hair is a dirty blonde or a lighter brown. Whether you want hair highlights or you want to lighten dark hair, a bottle of hair coloring or bleach may not be necessary. In fact, these artificial chemicals are bad for your both your health and your hair.
How To Lighten Hair Naturally With Sunshine
Right outside your window is a natural and incredibly strong force that will lighten brown hair in a relatively short time. That is, of course, the sun. You have probably noticed that your hair is usually lighter during the summer when you’re outdoors more. But if you want to know how to bleach hair naturally then simply lie down outside. Cover your body with cloth and spread your hair so that it will absorb those pure, golden rays. You will have incredibly beautiful — and natural — hair highlights, and, if you spend enough time outside, your hair coloring will be as light as you could possibly wish.
How To Lighten Dark Hair By Swimming
If lying in the sun is a great way to naturally lighten your hair, then going swimming first and allowing your hair to dry in the sun is even better. You can swim in all kinds of water: a pool, a fresh water lake or stream, or the ocean and get the same results. The chlorine in the pool seems to speed up the process even more.
NOTE: the safety of cholorine in a pool is questionable. Lots of folks who are interested in a natural life don’t like the chlorine in a pool – and I agree with them. But the bottom line is that if you’re going to swim in a pool if IS going to be chlorined. Period. So if you’re going to swim anyway, you can take advantage of the chlorine to highlight your hair.
Hair Coloring With Hydrogen Peroxide
Hydrogen peroxide has been used to lighten hair for decades. It’s not nearly as natural as sun and sea, but it surely beats a bottle of chemicals from the drugstore. Some people report success with pure hydrogen peroxide.
It is very important to first test out this concoction! Use a Q-tip and test on a small amount of hair near the back of the neck line. In this way, if something really funky happens, it will be hidden by your other hair. Wait 24 hours and see what’s happened and that everything is okay before you go ahead and use the hydrogen peroxide and ammonia on your hair.
One other warning: this stuff smells really raunchy!
Critical: never, never, never use any kind of bleach on your hair. It will damage both your skin and your hair and nobody should be breathing in those fumes.
Use Lemon To Lighten Hair
Lemon juice is a more natural alternative than hydrogen peroxide. One fresh lemon will give you approximately 2 tablespoons of a lemon juice. Mix this juice with approximately 6 tablespoons of water and rub it in to your dry hair [more juice if your hair is long, less juice if it's short.} Allow the juice to remain on your hair for several hours before you rinse it out. If you repeat this for several days [the time depends on YOUR hair] you will have very natural hair highlights. Of course, if you also take your lemon juice covered hair out in the sunshine that will speed the process up. The best thing about using lemon juice as a hair colorant is that it looks very natural.
Hair Coloring With Tea
Yes, hair coloring with tea is possible. We are talking about ordinary tea that we drink every day and use in our favorite iced tea recipe. Tea, though, is funny — it can lighten hair but it can also darken light colored hair. Steep your favorite tea and allow it to sit until cool. Test it out and see what happens. UThis method requires patience because the changes will be gradual.
Hair Color With Henna
In a way, any mention of henna is inappropriate in this article — because it will not lighten hair. Yet good-quality henna will safely allow dramatic color changes. A blonde can quickly become an enticing brunette or red head and brunettes can either become and a total redhead or add gorgeous red highlights to her hair. However, there is no way to bleach hair with henna — in other words, a brunette will not become a blonde with henna.
The really great news about henna is that it is wonderful for your hair, as long as as you are using good-quality henna. In fact, colorless henna is recommended for the health of your hair and the resulting ‘henna hair’ is stronger and more beautiful than it was before. How cool!
Use these home remedies to lighten hair naturally before you resort to the bottle of chemicals. Your body and your hair will thank you.

Healthy Grocery Stores

In 1978, friends and family who practiced yoga together joined resources and talent to start Mother’s Market & Kitchen, a natural foods market and restaurant. They wanted to provide the community with vegetarian foods and related lifestyle products that were not readily available at other stores. What began in 2,500 square feet in Costa Mesa has grown into six Southern California locations, serving over 50,000 people a week. The Huntington Beach store followed Costa Mesa in 1984 and Surf City has embraced what we do. Irvine, a developing community, was in need of a natural foods market and Mother’s answered the call in 1996. Four years later, the Laguna Woods Mother’s opened. With customer requests and encouragement from the Santa Ana City Council, we opened to rave reviews in Santa Ana in 2008. It is our largest store – so far – and we are so pleased to be able to offer even more of all that is available in natural foods. Our most recent opening was August 2009 in Anaheim Hills and the store and staff is ready to serve!
Over the years, Mother’s has gained a reputation for having all the stuff for specialized diets, top quality local and organic produce, the county’s largest selection of supplements and all at a great value! Organic, Non-GMO, Vegan, Vegetarian, Gluten-free, low carbohydrate, low-glycemic, low-fat, low-salt and more...Mother’s has something for everyone. The mission statement - Truth, Beauty and Goodness manifested in the context of natural foods markets and restaurants – continues to guide our growth. Mother’s is committed to the community, our employees, shareholders, vendors, manufacturers and all of the customers that have loved and supported us all these years.

How To Cook Beans in a Pressure Cooker

fabulousfoods.com

Pressure cooking beans is fast and easy, but you MUST use oil when doing so. It keeps the beans from foaming up as well as keeping the skins from popping off and clogging up the vent tube. Remember not to fill cooker over 2/3 full.

Here is the basic recipe:
1 cup beans
4 cups water
1 tablespoon oil (unless otherwise noted)
Cook according to the chart below. Soaking for 8 hours will greatly reduce the cooking time. You can also "presoak" beans by putting them in the cooker with the amount of water above and bringing the cooker up to pressure. Turn off the cooker and let it sit for 1 hour. Then proceed by cooking the beans for the "presoak" time below.
Unsoaked beans take the longest. When the cooking time is up, quick-release the pressure cooker under cold water to avoid foaming or sputtering at the vent. If you do hear a sputtering sound, place the cooker in the sink and run cold water over the entire cooker to bring the pressure down quickly. Remove and clean the lid, vent, and rubber gasket. Lock the lid back in place and proceed with cooking.
Important: ALWAYS clean the lid and vent thoroughly after cooking beans! Be sure to check the vent tube to make sure no bean skins are stuck in it.
Note: Black Eyed Peas, Split Peas and Lentils do not need to be soaked or even presoaked. You can use them unsoaked and they cook very quickly.
