Vegan Whole Grain Tofu Biscuits
These vegan biscuits have a hearty flavor.
- 8 ounces silken tofu
- 1/8 cup apple juice
- 1/8 cup lemon juice
- 1 cup whole wheat flour
- 1/2 cup rye flour
- 1/2 cup wheat germ, toasted
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon sea salt (optional)
- 1/4 teaspoon sesame seeds, toasted
1. Preheat oven to 450 degrees.
2. Blend tofu until smooth. Add the apple and lemon juices, and blend thoroughly. Transfer to a medium-sized mixing bowl & set aside.
3. Sift together remaining ingredients except the sesame seeds. Fold flours & seeds into tofu mixture. Turn out onto a lightly floured board. Roll out dough to 1/2" thickness. Cut with cookie cutter and place on lightly greased baking sheets.
4. Bake for 12 minutes.
Yield: 1 dozen biscuits
